Isolate is made by filtering concentrate again, usually by cross-flow filtration or ion exchange. What remains is drier and more neutral. WHAT YOU PAY FOR. The price per kilo is higher than concentrate, but so is the share that is protein. Work in price per kilo of protein rather than per bag — the gap between the two forms is smaller than the price tag suggests. THE LACTOSE. Isolate carries very little milk sugar, and that is the most common reason to choose it over concentrate. If you want to avoid lactose entirely, plant protein is the other option. TEXTURE AND MIXING. Isolate is thinner and tastes less of milk. It dissolves more readily in water, which is why many keep it for the shaker and use concentrate for porridge and baking. THE BRANDS.
